This ice cream is so simple, but a really elegant dessert finish to any candle-lit dinner party.
Ingredients
2 cups Heavy Cream
1 cup Whole Milk
3/4 cup Dark Muscovado Sugar, or other Dark Brown Sugar
2 Tablespoons Walnut Liqueur, or other spirit
1/2 cup Fig Jam, homemade or store bought
Preparation
stir cream, milk and sugar together until sugar is dissolved. Pour through a strainer to capture any brown sugar that did not fully dissolve.
Freeze cream mixture per manufacturer's instructions in an ice cream machine.
Stir fig jam with liqueur to loosen and blend.
At the point for 'mix ins' on your ice cream machine add the macerated fig jam mixture.
Cream mixture will begin to significantly soften while the fig jam mixture is blended in. That is to be expected, but it will not melt completely before freezing begins again. It is important not to mix the fig jam in too early, to best ensure even distribution of the fruit in the finished ice cream. Continue to process in the ice cream machine until frozen to soft serve.
Enjoy immediately as soft server, or transfer to a container and freeze for at least 4 hours for firmer ice cream.
