While they are a New Years dinner tradition in the Southern US to bring prosperity to the new year, they are a delicious hearty meal year round.
Ingredients
1 pound dry Black-Eyed Peas rinsed
1 Onion, diced
1 Bay Leaf
1/4 teaspoon White Pepper
1/4 teaspoon Allspice
1/4 teaspoon Cloves
1/4 teaspoon Mace
1 pound Ham Steak or a Ham Hock (optional, omit for a vegetarian/vegan version)
4 Cups Broth of your choice
Chopped Parsley to Garnish
Prepare
Rinse Black-eyed peas.
Place peas and all other ingredients (expect for the parsley) into an Instapot and pressure cook on high for 30 minutes.
Allow the pressure to release naturally for 15 minutes. Then finish releasing the pressure.
Serve alone or over rice with collard greens.
